Celery – A True Friend for Girls

Celery is a type of Umbelliferae.  It is very nutritious, rich in protein, carbohydrates, minerals and vitamins and other nutrients.  Pascal celery which is most popular and widely cultivated in Noth America and many western countries.  It is mostly made into salad or squashed with other fruits as health juices. There is another type of celery which is called leaf celery or Chinese celery that have stronger smell and taste but much thinner.  Though both have the same nutritional value.

Celery, including species from Europe celery varieties, has compact heavy, solid and thick plant petiole. It also has crisp texture and a strong and nice fragrant smell. There are 3 different types of color: yellow, green and variegated.

Even from the past, celery has be used as cleansing tonic.  It was grown as a winter and spring vegetable.  During winter time, Europeans mainly took salted meat.  Celery had been used then to counter the symptoms of salt sickness.  Now, the celery harvest season has been extended from September until April every year.

In every 100 grams of celery, it contains 3 grams of carbohydrates, 2.2 grams of protein and 0.3 grams of fat.  It also has 240 international units of Vitamin A, 0.03mg of Vitamin B1, 0.03mg of Vitamin B2, 0.32mg of Vitamin B3, 0.25mg of Vitamin B5, 10mg of Vitamin C and other small amount of Vitamin B6, B8, B12, E, K as well. There are also 170mg of calcium, 34mg of phosphorus, 0.5mg of iron, and some amount of copper, magnesium, potassium, sodium, zinc, mannitol and dietary fiber. It even has high content of Vitamin P which not so common in many fruits and vegetable.  

Mostly, people will just eat the petioles.  In fact, the leaves have much higher nutrients compare to the petioles especially Vitamin A and C.  So in future, please eat the leaves as well.

Besides being as health food, it has been used for medicinal purposes as well.  Celery can help in clearing phlegm and cleansing the stomach, expelling gas, help clearing eyesight, cleansing liver and even has antihypertensive effect.

In addition, celery is rich in volatile aromatic oil, not only can help to enhance appetite, promote blood circulation, sooth headache, insomnia, symptoms of mumps, measles and cough in children as well.

It is said that the leaves also contain medicinal components of celery glycosides, bergamot lactone glycosides and volatile oil, which can help lower blood pressure, prevention of atherosclerosis; neurasthenia, menstrual disorders, gout, muscle cramps have aided certain therapeutic effect.

Especially the elderly, they have less physical activity, less diet, inadequate drinking water.  That will let them prone to dry stool, regular eating of celery can help to stimulate gastrointestinal peristalsis, conducive to defecation.

In around 30 AD, it was written by Aulus Cornelius Celsus that, celery seeds can be used for pain relieve.

Besides the leaves and petioles, celery seeds can be used to produce essential oils and also seasoning salt.  The salt can be used to enhance the taste in salads, cocktails and other foods as well.

Overall it is a very nutritious and healthy vegetable for mankind.
